BLACK COCOA SUGAR COOKIES (aka bats & cats)




I guess it is no surprise that I love Halloween and cats (and bats too) So I had to make some special Halloween cookies and make them cat shaped. I'm not the best cookie decorator but all you need for this recipe are some fun cookie cutters and candy eye decorations. And to make them extra spooky, this recipe uses Black Cocoa to give them all the Halloween vibes. I mean look at these cookies, I cannot get over their cuteness! Those goggly eyes and chunky kitty paws are irresistable. And don't you want to bite into a scrumptious bat wing? Which shape is your favorite?


And don't worry if you can't get Black Cocoa, you can use regular cocoa powder and they will be equally delightful. This recipe is quite versatile so even after Halloween, you can make a batch of these and sandwich them with with frosting or just eat them as is. They will melt in your mouth.






BLACK COCOA SUGAR COOKIES

(makes about 2 dozen cookies)



INGREDIENTS

  • 1 and 1/2 cups all-purpose flour

  • 1/2 cup Black Cocoa powder

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 1/2 sticks unsalted butter, room temp

  • 1 cup sugar

  • 1 large egg, room temp

  • 1 teaspoon vanilla

Candy Eye Decorations, for decoration

royal icing or melted chocolate, for decoration



METHOD


In a large mixing bowl, sift the flour, cocoa powder, baking powder and salt together, set aside. In a bowl of a stand mixer, beat the butter and sugar together with a paddle attachment until light and fluffy, 3-4 minutes. Add the egg and vanilla and mix until combined. Add the flour/cocoa mixture and mix on low until a smooth dough is formed. Divide the dough into 2 and roll each half between 2 pieces of parchment to a 1/4 inch thickness. Chill the dough for 1 hour in the fridge. Preheat oven to 350F. Line 2 sheet trays with parchement paper. Cut out the rolled out dough using your favorite cutters and place the cookies on the prepared baking trays, placing the cookies about 2 inches apart on the tray. Bake for 12-15 minutes just until the cookies are set. Cool the cookies completely before attaching the candy eyes with a drop of real icing or melted chocolate. Let the icing or chocolate set before serving.


TIPS

  • Gather the scrapes and reroll to make more cookies or snacks for the chef.

  • If you can't find Black Cocoa, use regular cocoa powder and a few drops of black food coloring.

  • This recipe makes great sandwich cookies too. Fill them with your favorite frosting or buttercream.
